With sea on three sides and 1200 miles of desert to the north , lower Baja is like a desert island. But finding local produce, dairy, seafood and meat has been the goal of the Hotel since 1977. 

Offerings include Sonora beef, meatier and leaner than American beef, pork and suckling pigs, supplied by the pig farmer in the nearby rancho and locally fished seafood, including Pacific lobster, dorado, mahi-mahi, tuna, sierra, halibut, trigger fish, yellowtail, cabrilla, rockfish, skate sardines, rock scallops and shrimp. 

Fresh live clams, mussels and oysters arrive from the aqua-culturist up the coast. With the recent acquisition of  new Chef Patrice Jaumon and continued support from Consulting Chef Michael Roberts the Twin Dolphin has become a favorite for fine dining in Cabo San Lucas and a recipient of culinary awards.
